If you’re searching for a decadent brunch recipe that still packs a nutritional punch, look no further than this recipe. I partnered with Bob’s Red Mill, and I wanted to create something using their delish whole grain Buckwheat Pancake and Waffle Mix. 

I topped with banana slices and a homemade ganache–just equal parts warm cream and melted dark chocolate stirred together. How good does that sound?! Bob’s Red Mill products are wholesome, trustworthy, and delicious. Their Buckwheat Pancake & Waffle Mix is made with a blend of buckwheat flour and whole wheat flour (both organic!), which gives the waffles a hearty, nutty flavor. In addition, the flour mix provides a good amount of fiber per serving, which helps keep you full for longer. Win win!

To make the waffles, all you need is a little oil, an egg, and some water. Mix the ingredients together while your waffle iron heats up and they’ll come together in minutes! They’re tasty on their own, but I decided to take them up a notch with banana slices and a generous drizzle of my Chocolate Ganache. With only two ingredients—chocolate and heavy cream—it’s simple to make, but I share secrets in my recipe to make sure it’s as even and silky as possible. You want to be able to pour it over the waffles with ease! Every baker should have a great chocolate ganache in their arsenal, and this one is mine. The sweetness of the ganache pairs beautifully with the earthy waffles, resulting in a balanced yet indulgent breakfast.

Easy Chocolate Ganache

½ cup heavy cream
4 ounces dark chocolate, finely chopped

  1. Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring, until melted. 

  2. Heat the cream in a small saucepan until just starting to simmer. 

  3. Pour â…“ of the warm cream into the chocolate. Use a rubber spatula to stir small circles in the center of the melted chocolate, making larger circles until the cream is incorporated. Repeat with the â…” and then the final third of the cream. 

  4. Pour the ganache onto the waffle and top with whatever desired fruit, and enjoy!
